But here’s something divine that a reader posted on the Chemo Chic facebook page. I do believe that we feed our souls as well as our bodies. So a healthy diet has to contain some treats.
Dairy Free Chocolate Mousse
7oz of Dark Chocolate (Green & Blacks)
13½oz (400ml) Tin of Thick Coconut Milk
2 Level tablespoons of Icing sugar
2 Teaspoons of natural Vanilla Essence
Break the chocolate in pieces and melt the chocolate over a bowl of hot boiling water. Do not let the hot water touch the bottom of the bowl.
With a blender, whip the coconut milk and then add the icing sugar & vanilla essence.
Then add the chocolate and whip again.
Now pour into ramekins and put into the fridge to set for at least a couple of hours.
